Recent RAW Food Classes...

Hi Everyone!!!

Well, life got REALLY busy lately!!!  I haven't had time to post anything here, so here is a photos of a recent class at the library with over a dozen kids!!! :




The especially LOVED the Green Smoothie!  The parents were suprised how much the kids loved the raw food!  It is my hope that more and more parents will chose to feed their kids the best food on the planet!


I've been so busy with my RAW DETOX BOX!!!  I have a 4 week rotating menu now, and I'm having SOOO much fun with it!!!  Here are a few new dishes from it....

A Fresh Start For A Young One!

Hi everyone!!!

Here is a Level 1 Class I had recently with an 18 year old!  It's so nice to see even younger ones embrace the raw and living lifestyle!!!   She is a vegetarian, so the transition to eating raw seems natural for her.  She lives in Tennessee, so she's anxious to take what she's learned and share it with her family.

I was in the Houston Metropolitian Cooking and Entertainment Show on Saturday!!!

Hey everyone!!!!!

This weekend I had the priviledge of being a part of the Houston Metropolitian Cooking and Entertainment featuring Paula Deen!!!!! IT WAS AN INCREDIBLE EXPERIENCE!!!!!! Sorry some of the photos came out a little blurry!  They were taken with my phone!!! 

I actually wasn't nervous at all. I just remembered everything Alissa taught me about just being me and sharing my passion for Raw with everyone.

This was So Much fun!!!! They gave me 4 Sous Chefs to help me! The REALLY took the pressure off of me having to do everything from start to finish...which is what I'm used to doing. They prepared all of my veggies for me, so I could focus on presenting to my audience!




Right behind the black curtain was a working kitchen. Actually, I brought everything I needed for my show because all of the Chefs there had to share all of the equipment and I wanted to make sure that I had my Vitamix and Food Processor available when I needed it for my show. I brought samples of the food that I make for Tru Meals and displayed it on the table in front of me. The poster is advertising my Detox Box. (see http://www.trumeals.com/detoxbox.html). People were so amazed to see Raw Burgers, Stir Not Fry, Raw Tacos, and Mock Tuna Salad displayed right in front of them! During the show, I chose to make a Green Smoothie and Almost Salmon Pate on a bed of Romaine with Flax Crackers. I only had 30 minutes, so I had to make something quick and easy. I also took my "baby" Excalibur dehydrator because most people have never seen one, and I explained how to use it.

The Director of the Culinary Program was Chef Daniel Traster! He was SO nice...definitely knew his way around the kitchen!!!!  It was such an incredible priviledge working with him and seeing him in action!!!!

My Presenters badge gave me access to all of the backstage "magic"!!! And, the kitchen was INCREDIBLE!!!!
I had 2 shows, one at 11:00-11:30 and one at 3:30-4pm. There were more than 7,000 people at the event!!!! My show was held in the main show floor and I had enough seating for 50 people! The first show, only 15 were sitting with me because Paula's show was starting at the exact time mine was and the line extended behind my seating!!! By the time my second show started, Paula's show was over and so I had every seat filled and people standing watching me!!!! I was cool as a cucumber, yau'll!!!!! :-D
 
Between shows I got to hang out with the other Chefs in the VIP Chill Lounge where Paula Deen was having her Celebrity Luncheon...(which I was not invited to, but didn't care to go to anyway...).



Paula was totally in her "element" though! What you see is what you get...absolute down-home southern bell!!!! And yes, totally queen of butter!


During my show, I didn't want to offend my gracious host, so since "It's all about the food" I focused on that.

Today we started the Tru Meals Detox Box. For breakfast I had Brazil Nut Pancakes with blueberries followed by a Spinach, Banana, and Mango smoothie as a between meal snack. I know what you are thinking…”Spinach, in a smoothie?” It was really good and aside from the green color you would not have known there was spinach in it. For lunch, I had the Almost Salmon Pate Salad and Watermelon Gazpacho. The last time I had Watermelon Gazpacho was on a cruise and this one tasted just as good.
Dinner was Enchiladas which consisted of some sort of nut mashed into a tortilla filled with spinach, red pepper, mushroom, squash and cucumbers. We could not figure out the sauce that went on top of the Enchilada but, it was good. We got to finish day 1 of the detox with Chocolate Macaroons for dessert.
All and all the food was really good. Normally when you hear “detox” you think liquids and nasty food. I’m truly impressed and can’t wait to eat tomorrow’s food.


DAY TWO OF THE DETOX COMPLETE!

When I went to bed last night I figured I would wake up today starving. On the contrary, I was fine and I looked a little less bloated than usual. For breakfast this morning I had granola. The granola had raisins and mango. Both Davey and I really liked the granola. Around 10:00 a.m. I drank the spinach, mango, and banana smoothie. The smoothie, and the whole menu in general, helps keep the blood sugar from dropping too low or rising too high so you won’t be starving all day.
For lunch we had zucchini pasta with marinara sauce and tomato basil soup. The “pasta” was zucchini cut like curly fries. I loved it and thought it was the best meal. Dinner tonight was Pasta Primavera which was thinly sliced cucumber, carrots, and mushrooms and an apple cookie for dessert.
I haven’t felt nauseous, hungry, or tired during the last two days. Davey felt that Tru Meals designed a good menu that helped keep you fueled enough during the detox and it also tasted very good. I was impressed. I would like to try and do the 3-day menu another time. However, I was weak and the menu does not give you enough fuel to do a Crossfit workout.
Now that the detox is over we are ready to get back to eating meat. Davey already grilled up our breakfast and lunch for tomorrow.

Rejuvelac and CHEESE!!!

Hey everyone! 

 I'm putting a little "spin" on Banana Leather!!! I put whole berries in it: Strawberries, Raspberries, Blueberries, and Blackberries!!! When it's solid (hopefully the electricity will stay on long enough for that!!!), I'll cut them into fruit squares!!! ...totally my kids' idea!!! Cool, huh!






I'm also making Eggplant Bacon for my Gnocchi Carbonara!  It's Raw Dumplings!  I had it at Grezzo and it's REALLY good!!!  Stay tuned for that!

Hey, have you guys ever heard of Rejuvelac?  It's basically a fermented liquid that is made from wheat and rye berries and filtered water.  It contains 8 of the B vitamins, lots of proteins, carbs, phosphates, saccharine, and amylases!  It is rich in enzymes that assist in digestion and the growth of friendly bacteria!!!  You can use it in Smoothies, or make RAW CHEESE with it!!!!  The Cheese is FABULOUS!!!!  Here are the steps I took to make it:

First, you have to soak the Wheat Berries an Rye Berries in water and sprout them which takes a couple of days.  Then you have to add them to about a gallon of Fresh Water and let it sit for a couple of days...



After the 2nd day, it will start to "bubble" and have a pretty pungent smell to it...  Then, it's ready!!!


I made enough to fill 4 large jars!!!


You can put it in the frig for up to a month!!!  My family LOVED the smoothies I made with it!!!

You can also drink it straight or add lemon to it and enjoy:




Here's making the Cheese:  You put 2 Cups Rejuvelac, 1 Cup Mac Nuts, 1 Cup Cashews in Vitamix and combine till smooth:



Folding it into my Nut Bag...I did not have any Cheese Cloth, but the Nut Bag worked out just fine!

 

So, here's what I did: I turned my Nut Bag inside out, laid the Cheese on it, then flipped it closed:





Have to sit jars of water on it to drain:



Finally, I wrapped all of it up in Saran Wrap to help apply pressure to the cheese for draining:




TAAAAA DAAAA!!!!     When I tasted the Rejuvelac, it's actually not bad tasting... got a sweetness to it. It does kinda smell like old socks, though!!! My body kinda "tingles" all over from drinking it!!!! (that's a GOOD thang, yau'll!!!) I feel energized!!! I like it!!! I look forward to making a Smoothie later with it!!!

Believe it or not, it was actually an easy process!!!!
